Ingredients for 8 servings

100.0ml milk

¼-½ savoy cabbage , shredded

2.0 tsp vegetable oil

50.0g butter

1.0 tbsp Dijon mustard or wholegrain mustard (optional)

4 carrots , thickly sliced

10 shallots , peeled and halved if large

2.0 tbsp caramelised red onions (we like English Provender Company Lazy red onions)

300.0ml beef stock

400.0ml full-bodied red wine

1.5kg potato , cut into large chunks

2-3 thyme sprigs, plus extra to serve

16 good-quality pork sausages

2 x 250g packs mushroom , halved or quartered
