2/3 cup sugar

1/2 cup rice vinegar

1 tsp mustard seed

1/2 stick cinnamon

1 whole clove

2 x FOR THE MELON SHOTS --- Galia melons

12-20 x mint leaves

Juice of 1 1/2 limes

2 x FOR THE SALAD --- Charentais melons or cantaloupes

Flesh of 1/2 of a mini-seedless watermelon

Juice and zest of 1 orange

Zest of 1 lime

4 small heirloom tomatoes, cut into quarters

4 x basil leaves, cut in chiffonade

2 x mint leaves, cut in chiffonade

1/2 tsp extra-virgin olive oil

1 tsp balsamic syrup or aged balsamic vinegar

Pinch of sea salt

Black pepper to taste
