1/2 cup pine nuts, toasted in a dry skillet and cooled

2 large eggs, beaten

1 tsp dried oregano

1/2 cup chopped fresh parsley

2 1/2 cups bread crumbs

1 tbsp kosher salt

1/4 cup extra-virgin olive oil

1 medium onion, chopped (about 1 1/2 cups)

2 tsp kosher salt, plus more as needed

2 fresh bay leaves, or 3 dried bay leaves

1/2 tsp pepperoncino flakes

3 (28-oz) cans Italian plum tomatoes, crushed by hand
