So Freakin good! Used shitake mushrooms, and added edamame, orange bell pepper, an onion, and baby bok choi instead of cabbage. Used ramen noodles cause I had them.

Ingredients for 4 servings

1 lb raw soba noodles or udon noodles

1/4 cup Japanese soy sauce

1/2 lb thinly sliced mushroom (white, shiitake, etc. ok)

1 tablespoon toasted sesame oil

1 tablespoon cornstarch

2 tablespoons shiro miso

1/4 cup peanut oil

1/2 cup coarsely shredded carrot

2 tablespoons peanut oil

1 tablespoon grated fresh ginger

1 tablespoon sugar

4 cloves grated fresh garlic

6 green onions , cut diagonally in 1-inch lengths

2 lbs raw boneless chicken breasts or boneless chicken thighs, sliced thin

4 cups shredded cabbage

1 teaspoon salt

1 tablespoon sherry wine

2 tablespoons cornstarch
