Ingredients for 4 servings

1 1/2 lb beef short ribs

1 1/2 lb beef shank

1 lb lamb shank

2/3 cup dry white wine

1 x bouquet garni (1 bay leaf, 6 parsley stems, 2 sprigs thyme wrapped in a small piece of a leek, tied with a string)

1 tbsp coarse sea salt

5 x whole peppercorns

4 x cloves garlic, wrapped in cheesecloth

1 x onion, peeled and studded with 2 cloves

4 x carrots, peeled

4 x turnips, peeled and halved

1 small celeriac, peeled and diced

4 small leeks, white and green parts only, halved lengthwise and tied with a string

4 small Yukon Gold potatoes, peeled and cut in halves

4 x beef marrow bones, wrapped in cheesecloth and tied with a string
