Ingredients for 6 servings

4 1/2 pounds Pork Shoulder, off the bone and preferably with a thick layer of fat on one side

Kosher salt and freshly ground black pepper, to taste

2 x red onions, peeled and sliced

2 x fresh chiles, finely chopped

2 tbsp mild smoked paprika

2 tsp Caraway Seeds, toasted lightly in a dry skillet and then coarsely ground in a spice grinder or mortar and pestle

1 tbsp fresh marjoram, chopped

5 x Bell peppers, cored and sliced

1 jar Roasted Red Peppers, chopped

1 can Plum Tomatoes

4 cup low sodium, organic chicken stock

4 tbsp Red Wine Vinegar

2/3 cup TO SERVE --- Sour Cream

1 x Lemon, zested

1 tbsp fresh flat leaf parsley, finely chopped plus a little for garnish

steamed basmati rice
