Ingredients for 4 servings

1 1/2 lbs potatoes (any type)

2 cups vegetable or chicken stock

1/4 lb each broccoli, white cauliflower and Cheddar cauliflower (or any combination or type of cauliflower, like purple, or romanesco broccoli, too), the florets cut to smallish wedges

all the greens from the brassicas, coarsely chopped (or substitute any other leafy green, like kale)

1 cup navy beans, cooked until tender (or just tender)

1-2 tablespoons roasted red pepper, finely chopped

2 cloves garlic, minced

1/2 cup heavy cream

1-2 teaspoons white truffle oil

1-2 tablespoons butter

pinch red chili flakes (optional)

1/4 cup grated Parmesan (optional)

squirt of fresh lemon juice (optional)

3-4 tablespoons extra-virgin olive oil

salt and pepper to taste
