1 cup fresh spinach , stems removed

1 small red onion , sliced into 1/4 inch strips

1 sun-dried tomato , minced

1/2 lb cooked chicken, cut into 1/2 inch strips

1/2 lb andouille sausage , sliced into 1/4 inch slices (or other spicy smoked sausage)

2 garlic cloves , minced

1 red bell pepper , sliced into 1/4 inch strips

16 cherry tomatoes , cut in half

1 lb fettuccine , cooked according to package directions, drained

1/2 cup crisco canola oil

salt and pepper

8 large raw shrimp , peeled and deveined

2 teaspoons cajun seasoning

1 roasted red pepper, minced

2 tablespoons butter
