8 ounces pancetta, diced (1/2 in.; see notes)

1 1/2 cups shelled fresh peas or thawed frozen petite peas

About 1/2 cup whipping cream

3 large egg yolks (see notes)

3/4 cup fresh-grated parmesan cheese

1 teaspoon salt

1/4 teaspoon fresh-ground pepper

1 tablespoon chopped parsley
