Kobe Beef Sliders With Truffled Ketchup

This recipe could easily be made with ground pork (cook to 155) or chicken or turkey (cook to 165) depending on your preference of meat!

Ingredients for 3 servings

1 lb ground kobe beef

to taste kosher salt and cracked black pepper

6 slider buns, I use sweet potato rolls

1 box alfalfa sprouts

3 oz sharp cheddar cheese

1 tin Urbani truffle ketchup

2 tbs softened butter



Preheat a griddle or grill pan to medium high heat. Divide the beef into 6 even pieces and form in to balls by passing back and forth between your hands like you were playing catch. Then gently squish into a disk in your hand, making it slightly concave, like a donut, so it cooks up evenly.


Season patties liberally with salt and pepper and sear on the grill, about 2 minutes each side for medium rare, 3 for medium and anything more than that and you should just eat a hockey puck. After you flip, add a slice of sharp cheddar. Let rest for 5 minutes, loosely tented with foil.


While sliders are resting slice buns and butter generously and toast on the griddle. Remove and spread liberally with truffles ketchup. Place cheesey patty on the bun, top with sprouts and enjoy with guafrettes!
