Ingredients for 4 servings

Olive oil

1 tbsp chopped chervil

1 garlic clove, (unpeeled) smashed

4 British rose veal escalope, about 170g each and 1 cm thick

15 g butter

1 courgette, trimmed

1 tbsp flat leaf parsley, chopped

Few thyme sprigs

For the sauted vegetables:

Sea salt and freshly ground black pepper

2 large banana shallots, finely sliced

1 red pepper, cored and deseeded

1 yellow pepper, cored and deseeded

Approx 120ml Marsala

1 medium aubergine, trimmed

80 g mushrooms, sliced

Splash balsamic vinegar

2 tbsp chopped tarragon

300 ml chicken stock

2 medium tomatoes, peeled deseeded and diced
