• 6 Tbsps butter, at room temperature
• 3 shallots, minced
• 4 slices bacon, chopped
• 3/4 lb mushrooms, sliced
• 3/4 lb fresh spinach leaves, stemmed, cleaned well and chopped
• 2 firmly-packed cups Basic Cooked Kasha (see recipe)
• 1 orange, peeled, all white pith removed, then chopped
• 1 tsp dried sage
• Salt and freshly ground pepper to taste
• 6 Cornish game hens
• 1 1/2 Tbsps Dijon mustard
• 2 cups dry white wine
• 2 tsps all- purpose flour
