3 shallots, minced

4 slices bacon, chopped

3/4 pound mushrooms, sliced

3/4 pound fresh spinach leaves, stemmed, cleaned well and chopped

2 firmly-packed cups Basic Cooked Kasha (see recipe)

1 orange, peeled, all white pith removed, then chopped

1 teaspoon dried sage

Salt and freshly ground pepper to taste

6 Cornish game hens

1 1/2 tablespoons Dijon mustard

2 cups dry white wine

2 teaspoons all- purpose flour
