3 tablespoons fresh lemon juice

2 tablespoons flat leaf parsley, finely chopped

2 tablespoons fresh mint, finely chopped

100 grams ricotta salata or feta, crumbled or chopped into bits

1 cup hot dried red chile peppers

2 teaspoons sea salt

10 cloves garlic
