When I first heard that we were eating "light" chicken Parmesan my first thought was 'Impossible, there will be no flavor!' Boy was I wrong! This dish spoils your taste buds with intense bursts of marinara and Parmesan. This will be a dish that will be made time and time again in my household!

Ingredients for 4 servings

4 pieces boneless skinless chicken breast

2 cups marinara sauce

1 1/2 cups panko breadcrumbs

1/2 cup parmesan cheese, grated

1/2 cup mozzarella cheese, shredded

1/2 cup all-purpose flour

3 large egg whites

1 1/2 tsp garlic powder

1 tsp water

salt and pepper, parsley

Preparation

1.

Preheat oven to 475F

In skillet, heat Olive oil and toast breadcrumbs until golden brown (about 10 min) stirring often

Remove from heat and place in a shallow bowl and let cool--once cools then add parmesan

In another bowl whisk flour, garlic powder, salt and pepper

5.

Third bowl, whisk water and egg whites

6.

Line baking sheet with foil and spray cooking spray

7.

Pat chicken dry with paper towels and dredge each piece of chicken in floor first, then egg whites, and finally breadcrumbs, make sure each piece is fully covered and place on baking sheet.

8.

Bake for about 15 minutes

9.

While baking, hear up marinara in sauce pan

10.

Remove chicken from oven and spoon marinara over each chicken and top with mozarella, throw back in oven for another 5 min or until cheese is melted

11.

Add parsley, Parmesan, and additional marinara if desired, serve over spaghetti.
