2 x shallots, diced

1 x clove garlic, grated or pressed

2 tsp balsamic vinegar

3 tbsp extra virgin olive oil

big pinch of salt

a few turns of pepper

olive oil for grilling

3 x ears corn, kernels cut off the cob (raw)

2 tbsp Lillet Blanc or white wine

3/4 lb pasta or ravioli

1 tsp salt

parsley, coarsley chopped

parmesan, sliced with a vegetable peeler
