285 g smoked haddock fillet pepper

1 bay leaf

1 blade mace (or add 1/4 teaspoon ground mace with the other spices later)

1 sprig parsley

500 ml water vegetable stock (a good stock cube, concentrate or powder is fine)

40 g butter

1/2 teaspoon vegetable oil

1 leek

300 g arborio rice

1/4 teaspoon ground cumin

1/4 teaspoon ground coriander

1/4 teaspoon turmeric

Zest of 1 lemon, plus 1 teaspoon juice

80 ml white wine

6 quail's eggs (optional)

2 tablespoons freshly chopped parsley
