1 large handful fresh herbs, mixed (such as chives, basil, parsley, cilantro, tarragon)

1 large clove of garlic, chopped

2 large ripe tomatoes, seeded

1 small red bell pepper, seeded

1/4 cup extra virgin olive oil

2 tablespoons fresh squeezed lemon juice

1 tablespoon sherry vinegar

1/2 small red onion, sliced very thin

1 cup cucumber, peeled and diced

Salt and freshly ground black pepper

1/2 cup fresh bread crumbs
