Salt & Pepper to taste

2 T. extra virgin olive-oil

1 medium onion, finely chopped

1 ½ t. finely minced fresh ginger

1 ½ t. dry mustard

1 ½ c. long-grain rice, preferably jasmine

2 ½ c. chicken or vegetable stock (I use chicken flavored bouillon cubes)
