600 g of squid tubes and tentacles, cleaned and dried

250 g of Japanese breadcrumbs, ground in a blender

4 eggs, beaten

250 g of flour

1 small red onion, finely diced

1 tbsp of chopped parsley

1/2 lemon, juiced

vegetable oil

250 ml of white wine

500 ml of double cream

1 shallot, finely sliced

3 garlic cloves, finely diced

3 tbsp of Dijon mustard

1 tbsp of Pommery mustard

30 ml of white wine vinegar

40 ml of olive oil

1 tsp of Dijon mustard

1 dash of Worcestershire sauce

1 punnet of cherry tomatoes

4 heads of baby gem lettuce
