Ingredients for 4 servings

2 eggs

1 cup Italian seasoned breadcrumbs

1 cup grated Parmesan cheese, divided

1/2 teaspoon coarse salt

1/4 teaspoon freshly ground black pepper

1 large eggplant, sliced into 8 rounds

4 tablespoons olive oil

3 cups tomato sauce

1 pound fresh mozzarella, sliced into 8 pieces
