6 large (about 1 1/2 pounds) Idaho potatoes, scrubbed and, if desired, peeled

Peanut oil, for frying

2 tablespoons smoked or regular olive oil (store-bought or homemade; see variation below) or 1 1/2 tablespoons truffle oil

1/2 cup grated aged Manchego cheese

2 teaspoons coarse sea salt, preferably gray salt

1/2 teaspoon freshly ground black pepper
