1/2 teaspoon salt

1 pound boneless, skinless chicken breasts (about 3)

1/4 teaspoon fresh-ground black pepper

2 tablespoons water

2 pounds spinach, stems removed, leaves washed well (about 4 1/2 quarts)

1 red bell pepper, cut into thin strips
