Ingredients for 8 servings

2 kg of side of salmon

2 bunches of spring onions

10 g of coriander cress

1 bunch of French breakfast radish

oil

stem ginger in syrup, 350-400g jar

1 lemon grass stalk

1 beetroot, peeled and sliced very thinly

1 pinch of fresh thyme

2 tbsp of honey

2 tbsp of white wine vinegar

4 tbsp of olive oil

salt

pepper

500 g of black treacle

250 ml of Kikkoman soy sauce

60 g of fresh ginger

10 g of red chilli

60 g of lemon grass

80 g of coriander stalks

8 lime leaves

1 kg of sugar

500 g of flaky St Lorenzo Sea Salt

500 g of coarse St Lorenzo Sea Salt

2 lemons, juice and zest

4 oranges, juice and zest

15 g of coriander seeds

15 g of white peppercorns
