4 small heirloom or firm, ripe summer tomatoes

6 to 8 large leaves basil, stacked, rolled and cut crosswise into very thin slices

Freshly ground pepper

6 to 8 skinless Pacific Dover sole fillets, about 1 1/4-1 1/2 pounds, or other tender, thin white fish fillets
