1/2 cup almond meal or almond flour

1 tsp kosher or sea salt

2 tbsp sugar

12 tbsp cold unsalted butter

1/2 cup leaf lard or trans-free shortening

1/3 cup ice cold vodka

1/3 cup ice cold water

2 cup blackberries (fresh or frozen)

2 tbsp sugar plus 1/4 cup sugar

3 x egg yolks

1 tbsp lemon juice

1 1/2 tbsp arrowroot flour or tapioca starch

2 cup sugar

1/2 cup butter at room temperature

5 x eggs

1/4 cup milk

3/4 cup cream

1 tbsp cornstarch

2 tbsp medium grain cornmeal

1/4 cup lemon juice

Zest from three medium lemons (roughly 3 Tbsp of zest)

1 tsp vanilla extract

1/3 cup honey

1/3 cup fresh squeezed orange juice

1 tbsp arrowroot

4 1/2 cup mixed berries

zest of 1 medium orange (about 1 Tbsp)
