Several tablespoons kosher salt

2 to 4 large kaffir lime leaves, roughly chopped (if very aromatic, use 2; otherwise use more)

2 or 3 Thai chiles, sliced in half lengthwise, to taste

2 cups unseasoned rice vinegar

1/2 cup firmly packed brown sugar (light or dark)

1 tablespoon Bragg's amino acids or soy sauce
