Ingredients

Sauerkraut:

32-ounce jar sauerkraut, drained, rinsed and squeezed dry

1 bottle Riesling or other Alsatian white wine

1 white onion, thinly sliced

3 carrots, peeled and thinly sliced

1/2 cup golden raisins

1 cup diced fresh pineapple

Sachet with 6 crushed juniper berries, 3 whole cloves, 10 smashed peppercorns

Cornish hens:

4 Cornish game hens, each about a pound (or 2 pheasants)

Brandy

Salt and pepper

1/2 apple, cut in rough chunks

1/2 small rib celery, cut in 1-inch pieces

1/2 small onion, cut in chunks

4 cloves garlic, peeled

8 thin slices bacon

1/2 pound thick-cut bacon, cubed
