1/4 cup (60 ml) extra virgin olive oil

1 medium yellow onion, peeled and medium diced

5 cloves garlic, smashed and peeled

1 tablespoon chopped fresh rosemary

1 tablespoon chopped fresh sage leaves

1 tablespoon fresh thyme leaves

3 pounds (1.36 k) Yukon Gold potatoes, peeled and quartered

2 cups (480 ml) heavy cream

2 tablespoons cold unsalted butter

kosher salt to taste

cracked black pepper

white truffle honey (optional)

1 tablespoon finely chopped fresh chives

homemade potato chips, for garnish (optional)
