6 Japanese eggplants

5 tablespoons canola oil (or any neutral oil), as needed

1-½ teaspoons salt

2 cloves garlic, finely minced

1 shallot, thinly sliced

2 tablespoons grated fresh ginger

1 tablespoon dried black fungus mushrooms

1 fresh bamboo shoot, shredded

1 jalapeño pepper, stemmed and thinly sliced

1-½ tablespoons chili garlic sauce

1 teaspoon wild flower honey (or any sweetener)

3 tablespoons hoisin sauce

3 tablespoons soy sauce

1 teaspoon black pepper, freshly ground

2 teaspoons toasted sesame oil

1 tablespoon green onions, thinly sliced

1 tablespoon cilantro, coarsely chopped

2 teaspoons sesame seeds (optional), slightly dry toasted
