Topped with a sriracha mayo - didn't have radishes but added some grated ginger and minced garlic to the carrots. Great crockpot meal will make again!

2 1/2 lbs pork butt or shoulder trimmed

1/2 cup low sodium chicken broth

1/4 cup low sodium soy sauce

1/4 fresh lime juice

1 teaspoon fresh grated ginger

1 daikon radish

2 carrots

1 cup warm water

2 tablespoons rice vinegar

1 1/2 tablespoon sugar

1 tablespoon salt

Mini baguet

thai sweet chili sauce

cuccumber ribbons

green onion

cilantro
