1 tablespoon olive oil

1 medium eggplant, diced (I used a neon eggplant)

1/2 red onion, diced

2 cloves garlic

1 teaspoon salt

1 pint cherry tomatoes (I used Sun Gold, a very sweet gold cherry tomato)

3 tablespoons pine nuts

1 teaspoon red pepper flakes

1 large bunch fresh basil

1/4 cup grated Parmesan cheese

8 oz uncooked Barilla Plus Farfalle (Bow-Tie) Pasta
