Pan-Seared Noodle Pillows With Shrimp & Chicken

1 pound fresh Chinese-style egg noodles

3 tablespoons vegetable oil

1 tablespoon minced fresh ginger

1 teaspoon minced garlic

1 teaspoon red pepper flakes or to taste

1/2 pound skinless, boneless chicken breast, cut into 1/4-inch thick slices

6-8 small wood ear mushrooms, soaked in hot water 30 minutes, drained, stemmed

2 tablespoons oyster sauce or to taste

1 tablespoon soy sauce

1/4 pound raw shrimp, peeled, deveined

2 teaspoons cornstarch

1/2 cup canned low-sodium chicken broth or water

2/3 pound baby bok choy, leaves cut into 2 to 3 pieces, blanched 1 minute, drained

1 carrot, sliced on the diagonal into 1/8-inch pieces, blanched 2 minutes, drained

2 roma tomatoes, seeded, cut into wedges

1 tablespoon rice wine or dry sherry (optional)

cilantro sprigs for garnish
