1 pound bittersweet or semisweet chocolate, chopped

3/4 cup (6 oz.) butter, at room temperature, cut into 1/2-inch chunks

5 large eggs, separated

2 teaspoons vanilla

1 1/2 tablespoons all-purpose flour

1/2 cup firmly packed dark brown sugar or finely crushed piloncillo sugar (see notes)

1/4 teaspoon cream of tartar

Powdered sugar

1 cup whipping cream

1 teaspoon vanilla or 1 tablespoon coffee-flavored liqueur such as KahlĂșa
