Sunflower oil, for greasing

2 tbsp icing sugar

75 g fresh blackberries

1 fresh mint sprig

150 ml double cream, optional

125 g Blackberry Purée

125 g fresh blackberries

2 tbsp caster sugar

23 g powdered gelatine (2 x 11.5g sachets)

450 g caster sugar

150 ml maple syrup
