I didn't love it all. The pancakes were nice and fluffy but the caramelized banana turned out soggy. The syrup was nice.

Ingredients for 12 servings

1 large egg

1/4 cup creamy peanut butter

1 medium ripe banana, mashed (about 1/2 cup mashed banana)

3/4 cup cream or milk

2 tablespoons granulated sugar

1 tablespoon light brown sugar, packed

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

pinch of salt

1 banana, sliced into rounds about 1/4-inch thick

2 tablespoons light brown sugar, packed

1 tablespoon butter

1/4 cup cream or milk

1/2 cup maple syrup, warmed

1 tablespoon creamy peanut butter

1/4 teaspoon cinnamon
