My picky eater loved this ( w/out pesto) and the rest of us loved it w/ pesto! I didn't blanch the greens just blended them raw.

I made this recipe for a friend that's gluten-free, I substituted crushed plain rice crackers for the bread crumbs and they were amazing! So light, but wonderful flavor. I also used an escarole pesto made with pistachios, simply because I had it on hand, and I got rave reviews on the dish as a whole!

2 pounds ground chicken thigh

1 tablespoon salt

1 teaspoon fennel seed, ground

1 teaspoon black peppercorn, ground

1/4 cup white wine

1/2 cup parsley, chopped

1/2 cup breadcrumbs

2 eggs

2 tablespoons olive oil

1/8 cup walnut pieces

4 cups fresh baby spinach

2 cups Fresh Basil leaves

1 teaspoon salt

1/2 cup olive oil

1/8 cup grated Parmesan cheese
