Ingredients for 10 servings

1 x (2-pound) pumpkin

2 x plantain bananas (green or yellow)

2 x Fuji apples, quartered

4 tbsp canola oil, as needed

1 x sprig marjoram, and some extra for garnish

1 x prig thyme, and extra for garnish

1 x yellow onion, chopped

2 x cloves garlic, halved

1 tsp chanterelle mushrooms, drained and patted dry

2 x carrots, peeled and diced

1 tsp red chili flakes

1 tsp kosher salt, as needed

1 tsp white pepper, freshly ground

1 1/2 cup heavy cream (or half and half)

1/2 cup Creme fraiche

1/8 tsp nutmeg

1/2 tsp saffron threads

1 Drizzle walnut oil (optional)
