2 slices bacon, chopped

3/4 cup soy sauce

1/2 cup diced papaya

1 carrot, peeled and chopped

8 veal cheeks

4 cups veal stock

4 cups red wine

Vegetable oil, for searing

Skin from 1 whole pineapple
