Ingredients

1 1/4 lb lean ground turkey (1 package)

1 slice white bread, crust removed

1 1/2 tbsp extra virgin olive oil, plus more for brushing the burgers

1/4 cup fresh flat-leaf parsley, finely minced

2 tbsp onion, very finely minced

1 egg

1 1/2 tsp smoked paprika

3/4 tsp cumin

1/2 tsp garlic powder

Heaping 1/4 tsp cayenne pepper

1/2 tsp salt, or more to taste

1/2 tsp pepper, or more to taste

1 1/2 tbsp applesauce

vegetable oil, for frying (optional, if not grilling)

10 slider-sized buns for serving

1/2 cup good quality mayonnaise (I like Spectrum)

2 tbsp fresh basil, minced

1 tbsp fresh parsley, minced

1 tbsp freshly squeezed lemon juice

1 1/2 tsp lemon zest

OPTIONAL TOPPINGS: Baby kale or butter lettuce, fresh tomato slices, dill pickle slices
