Ingredients for 4 servings

1 x butternut squash, 6-8 inches high, peeled and diced with seeds scooped out

200 gm spinach, washed and excess water squeezed out, chopped

1 tin chickpeas

1 tin Tomatoes

1 tin Coconut Milk

2 cloves garlic, finely chopped

1 x onion, finely chopped

1 x green chilli, finely chopped. More if you like it very hot!

1 thumb size ginger, peeled and finely chopped

1 handful chopped fresh coriander

1/2 lemon Lemon

1 tbsp Cumin Seed

1 tbsp Coriander Seed

1/2 tbsp turmeric powder

8 black Peppercorns
