Ingredients for 6 servings

1 lb boneless, skinless chicken breast, cut into strips

1 red onion, diced

1 small butternut squash, skinless chicken breast, cut into strips peeled, seeded, and cubed

1 medium zucchini, skinless chicken breast, cut into strips peeled, seeded, and cubed peeled if desired, and diced

1 red bell pepper, seeded and diced

6 garlic cloves, minced

2 (15- oz) cans white beans, drained and rinsed

2 (14.5- oz) cans diced tomatoes, undrained

1 Tbsp chili powder

1 Tbsp curry powder

1 tsp ground cumin

1 tsp smoked paprika

1 tsp kosher salt

½ tsp ground black pepper

½ cup chicken broth

1 to 2 dried red chile peppers (optional)
