Ingredients for 3 servings

135 grams dried chick peas about 3/4 cup

1 tablespoon olive oil

1/2 carrot cut into sticks

1/2 large onion cut into wedges

1 rib celery cut in half

1 teaspoon salt

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 sprig thyme - fresh minced

1/2 sprig rosemary - fresh minced

2 grams garlic grated 1 small clove

1/2 teaspoon lemon zest

1/4 teaspoon salt

1 red bell pepper - roasted

45 grams lemons - preserved (about 1/2 a lemon) chopped

45 grams olives - kalamata chopped

30 grams red onion 1/4 small red onion

30 grams celery diced about half a rib

13 grams flat leaf parsley minced (about 1/3 cup packed)

1 tablespoon sumac optional
