Ingredients

1 tablespoon extra virgin olive oil

1 cup chopped onion (about 1/2 medium-size onion)

2 cloves garlic, sliced

1 teaspoon oregano

1/4 teaspoon smoked paprika

1/8 teaspoon cayenne pepper

Kosher salt and ground black pepper, to taste

1 quart low-sodium chicken broth

1 can (14.5 ounces) low-sodium diced tomatoes

1 cup shredded cabbage (can use coleslaw mix, if desired)

1 large avocado, diced

1 8-ounce filet salmon, quartered and sliced very thin

Tortilla chips

Limes wedges

Cilantro (optional)

Creme fraiche (can substitute sour cream or crema)
