1 cup old fashioned oats
5 egg whites
1 tsp baking powder
1/2 cup ricotta cheese (I use fat free)
A pinch cinnamon
1 ripe banana
A handful semi-sweet chocolate chips (optional!)
Mix all ingredients except chocolate chips in a vitamix or blender on low speed (do not over mix!).
Make pancakes as usual - I cook them on low - medium heat on my range. I use about 5-6 tbsp of mix per pancake. Add chocolate chips and flip the cake when it starts to bubble.
