FOR SALAD: Combine the first six items however you like. Add or subtract anything you like. I go a little lighter on the mint.
FOR DRESSING: In a blender combine yogurt, tahini, lime juice, honey, cilantro, mint (more cilantro than mint, as mint can be overpowering), garlic, spices, and oil. Blend until smooth. Adjust to desired flavor and consistency.
FOR FALAFEL: Follow instructions on package. I baked mine at 375 on parchment for about 15 mins. Until browned.
Garnish with pickled onions. I used David Lebovitz's recipe.
