amazing pancakes. so fluffy!! The batter was a bit thick so I added milk as well as buttermilk.

2-1/2 tsp. baking powder

3 Tbs. unsalted butter; more for serving

9 oz. (2 cups) unbleached all-purpose flour

1/2 tsp. kosher salt

Pure maple syrup for serving

2 cups buttermilk

1/2 tsp. baking soda

Vegetable oil for the griddle

1/4 cup granulated sugar
