1 12 to 14 ounce loaf challah Bread, cut into cubes

6 large eggs

1 cup vanilla Hemp milk

2 cups lowfat Plain yogurt

3 tablespoons Grade B maple syrup

1/2 teaspoon salt

1 1/2 teaspoons cinnamon

1 teaspoon vanilla extract

3/4 teaspoon stevia or 2 individual use packets

3 tablespoons shredded coconut plus 1 tablespoon for topping

2 bananas

maple syrup for serving
