1/4 cup apple cider vinegar

1/4 teaspoon ground black pepper

1/2 cup thinly sliced radishes

1/2 teaspoon salt

2 pounds baking potatoes, like russets, peeled and cut into uniform 1/2-inch cubes

1/4 cup vegetable oil

1/2 cup grated peeled apples

1 cup sliced Belgian endive
