15 ounces (1 can, or 425 g) sweet potato purée

1/3 cup vegetable oil

2 teaspoons garam masala

60 g (1/3 cup, not packed) light brown sugar

120 g (1 cup) powdered sugar, sifted

200 g (1 2/3 cups) whole wheat pastry flour or all-purpose flour, sifted

2 tablespoons cornstarch (optional, but makes for a texture that’s slightly less soft, more muffin-like), sifted

1 teaspoon baking soda

1/2 teaspoon fine sea salt
