1 1/4 cups all-purpose flour (I store mine in the fridge, but if you don’t, chill it for 30 minutes in the freezer)

1/4 teaspoon salt

8 tablespoons very cold unsalted butter, cut into pieces

1/4 cup plain yogurt (full fat)

2 teaspoons fresh lemon juice

1/4 cup ice water

egg yolk + 1 tablespoon water for brushing

3-4 small/medium sized white potatoes, thinly sliced

1/4 of a red onion, thinly sliced

1/2 cup grated parmesan cheese

2 tablespoons melted butter

parsley, for garnish (or other fresh herb)
